Like many good things in life, we discovered this coffee almost by accident. Lindsey Bolger, our Head Coffee Buyer, traveled to Costa Rica and had the opportunity to "cup" (a formalized method of tasting) several exquisite samples from around the country. After exhaustive sessions of blind tastings, the peaberry sample was repeatedly among the highest scorers with its burst of citrus and ripe fruit with sweet and engaging brown sugar notes.
So, what's a peaberry? Glad you asked! While most coffee cherries produce two beans, a select few yield only one. These robust, round beans are called peaberries and are found in only 4-5% of the coffee harvest. During processing, they are carefully hand sorted and put aside because they are highly prized by connoisseurs for their balance and intensity of flavor.
