Costa Rica Las Lajas is a “honey process” coffee, which means the skin of the cherry is removed, but the sweet pulpy fruit remains. The beans are then dried on raised beds (more commonly seen in Africa than Costa Rica) to ensure uniform drying. The result is an intriguing and especially flavorful departure from the classic Costa Rican profile.
